Batch #6 – Day 0?

After some struggle, Koji [麹] has been completed for the Batch #6. The Koji made first had turned out too dry, so this was the second attempt, which looks much better. Koji is high-maintenance, demanding frequent care during the 48 hour development period. So, Sake brewers take care of Koji overnight with little sleep. Now we are ready for Moto (and some sleep).
