Batch #5 – Day 46

Batch #5 has been pressed, yielding 3 growlers of fresh Sake. SMV -28 and %ABV 16.5. It’s fruity and sweet – maybe too sweet. Its low alcohol percentage and high sugar content tell that I pressed it prematurely, not giving it enough time to complete the fermentation. Gauging the right timing of pressing is the next challenge, I guess.
