Tasting the batch #2, which has been in the main fermentation phase for 25 days so far. Has good Nihon-shu [日本酒] smell; not too sweet, not too dry. Slight carbonation shows fermentation is still in progress. I plan to leave it until the very end of the fermentation this time.
