Batch #7 – Day 17

Batch #7 has been very active for the past two days, producing high foam [高泡], although we used a “foamless” yeast strain [泡なし酵母]. The amount of foam is much less than its foaming sisters but is enough to overflow from the fermentor sometimes. This is the first time we used “foamless” yeast and we are still learning.
