Day 31 or the 20th day of the main fermentation. Still slightly bubbling, but it looks the active fermentation period has completed. We’ll lower the temperature and keep it for a couple more weeks.
Taste wise, it’s much drier than the previous batches. Little sweet fruit flavor and the presence of alcohol is much stronger. As we experimented with the rice with lower polish rate, it was anticipated but a little disappointing. Our next investment may be a rice miller.
