Bottling of the Batch #2 completed – total of 7 and a half bottles of Sake. I’m confident it tastes better than the first Batch. Finer temperature control improved the fermentation, I think.
However, not everything went well this time. We had an event. Unfortunately, we spoiled 1-1/2 bottles during the pressing. Not sure exactly what happened, but the Sake filtered overnight on the second day of the pressing tasted awful. It may be because it contacted the air too long. The pressing process needs to be improved for the next batch.
The Batch #3 have to wait until next year. The Sake South Brewery will be closed for the holidays.
